Try out these Instant Mango & Mix Vegetable Pickle and do share your feedback with us. #MangoPickle #VegetablePickle #Achar Instant mango and mix achaar Ingredients for Achaar Masala Mix: Nigella seeds 1/4 cup Mustard seeds 1/4 cup Coriander seeds (crushed) 1/4 cup Salt 1 tsp Red chili flakes 1/4 cup Fennel seeds 1/4 cup Cumin seeds (crushed) 1/4 cup Turmeric powder 2 tbsp Dried Fenugreek 1 tbsp Ingredients for Mango Achaar: Raw mangoes (cubes) 3 cups Mustard oil 1 ½ cup Achaar Masala mix 1/2 cup Vinegar 1 tbsp Ingredients for Mix Achaar: Carrot 1 cup Raw Mango 1 cup Green Chilies 1 cup Lemon 1 cup Garlic 1 cup Curry leaves 8 to 10 Vinegar 1 tbsp Mustard oil 1 ½ cup Achaar Masala mix 1/2 cup Directions for Masala Mix Preparation: In a bowl add nigella seeds, mustard seeds, crushed coriander, salt, red chili flakes, fennel seeds, cumin seeds, turmeric powder, dried fenugreek and mix well. Your Masala is ready. It can be stored in an airtight jar for up to 6 months. Directions for Mango Achaar Preparation: Cut the mangoes in cubes and set aside. In a pan add oil and heat it on high flame for 4-5 minutes to eliminate bitter taste of oil, once oil is hot turn off flame and wait for 2 minutes. Turn on flame and add raw mangoes and cook on medium flame for 8-10 minutes. Now add prepared achaar masala mix and cook for 2-3 minutes, then add vinegar and mix it well. Instant mango pickle is ready. You can store it in an airtight jar in refrigerator for up to 1 month. Directions for Mix Achaar Preparation: In a pan add oil and heat it on high flame for 4-5 minutes to eliminate bitter taste of oil. Once oil is hot turn off flame and wait for 2 minutes. Turn on flame and add garlic, carrot, mangoes and cook for 3-4 minutes, then add lemon, green chilies and cook for another 3-4 minutes. Now add achaar masala mix and cook for 2-3 minutes now add curry leaves and vinegar and mix well. Instant Mix Achaar is ready. You can store it in an airtight jar for up to 1 month. Preparation time: 15-20 mins Cooking time: 25-30 mins Serving: 5-6
