Outdoor Grilling with Wood & Charcoal Ingredients: 1 whole chicken (2-3 lbs). For the marinade: Mix 1/2 cup plain yogurt, 1 Tbs turmeric, 1 tsp all-spice, 1 tsp oregano, 2 tsp salt, 1/2 tsp paprika, 1 tsp ground garlic, 1 small onion-diced, 3 Tbs lemon juice, 3 Tbs olive oil, and 1/2 tsp black pepper. For faster cooking butterfly the chicken with breast side down; cut along each side of the backbone and remove it. Turn chicken over and press firmly on breastbone to flatten. Make a few slits with a sharp knife in the meat as shown and then rub with the marinade well. Cover and refrigerate for few hours. Prepare outdoor charcoal grill. Place chicken in a grilling basket and place on top of the grill. Turn basket over every 10 min. After each turn, brush meat with a mixture of 1/2 cup olive oil, 1/4 cup lemon juice, and 6 minced garlic cloves. Continue to grill chicken until thighs register 175F. Serve with fresh salad and garlic dip. Enjoy!
