Today, I’m sharing the recipe of Rice Kheer. Basically, rice Kheer / payasam is a rice pudding prepared by boiling rice, milk and sugar to make a thick pudding consistency. in addition, it is topped and flavored with cardamom, cashews and almonds . typically, kheer is served as dessert after the full course meal during the festivals, temples and any auspicious occasion. Why Kheer is offered to Moon God during Sharad Purnima? Sharad Purnima (also known as Kojagiri Purnima, Navanna Purnima, or Kaumudi Purnima) is a harvest festival celebrated on the full moon day of the Hindu lunar month of Ashvin (September to October), marking the end of the monsoon season. The Kojagari Purnima concerns the observance of the Kojagara Vrata. People perform this vrata under the moonlight after fasting for the day. Lakshmi, the Hindu Goddess of Wealth, is significantly worshipped on this day as it is believed to be her birthday It is believed that moon showers Nectar ‘amrit’ or elixir on Sharad Purnima. Thus, people put the kheer pots on the terrace to absorb the nectar showered by moon. It is supposed that moon is in its most powerful form on Sharad Purnima as it comes the closest to the Earth. The ‘amrit’ is said to have healing and health-giving powers. It is also believed that on the night of Sharad Purnima, moon completes sixteen days of Amrit, it is this night that Kheer is kept in the open sky, and in the morning it is eaten as considered a prasad. It is believed that the disease is released and the age is long. In the form of a healthy tan, a never ending wealth of health gets wealth filled with wealth. INGREDIENTS - 1 Ltr. Full Cream Milk. - ½ Cup Rice , Washed thoroughly and soaked in water for 10 Minutes. - ½ Cup Sugar, Adjust according to your taste. - Few Chopped Cashews, Almonds , Pistachios and 4-5 Cardamoms. RECIPE - Put Milk in a Heated Pressure Cooker. Get to a Boil. - Once Milk Starts simmering, Add soaked rice. Stir well. - Close the lid till 1 whistle, when 1st whistle blows stop it , Reduce the Flames to Low, Boil for 5 more minutes. - After 5 minutes , Turn off the gas , and let the steam released. - Open the lid and stir nicely. Rice are cooked nicely. - Turn on the gas again, Keep the Flames on low. - Add chopped Almonds, Cashews , Pistachios. Mix well. - Add sugar to taste and adjust accordingly. Keep stirring. - Crush cardamoms through Mortar and pestle, Peel off the Skin of cardamoms. - Make a Powder of Cardamoms. - Put Cardamom powder in the Boiling rice. Mix well. In no time , Tasty and delicious Kheer ( Rice Pudding ) is ready. - Serve hot or Chilled in a Pot, Garnish with Almonds or any dry fruits you want.
