Part 1-
THAI PASTE-
Coriander Seeds - 2 Tbsp
Cumin Seeds - 1/2 Tsp
Black peppercorns - 1/2 Tsp
Onions - 1/4 Cup
Coriander Stem - 1 Tbsp
Fresh Coriander- 1 Cup
Basil Leaves - 1/2 Cup
Lemongrass sticks - 2 no.
Galangal- 2 Inches
Green Chillies - 3-4 No.
Kaffir Lime leaves- 3-4 No.
Water - As Req
Salt – TT
Method-
Dry Roast Coriander seeds, Cumin seeds and black peppercorn.
Then take all the ingredients in the mixer jar and make a fine paste. Add water as require.
Part 2-
CHICKEN MARINATION-
Chicken – 300 Gms
Black Pepper powder – ¼ Tsp
Salt – TT
Ginger (Chopped) – 1 Tbsp
Garlic (Chopped) – 1.5 Tbsp
Red or Green Chillies – 2-3 No.
Lemongrass – 1 Stick
Soy Sauce (Light) – 3 Tbsp
Method-
Cut lemongrass in diamond shape. Mix all the ingredients together and marinate the chicken.
Keep it for minimum 2 hours for best results.
Part 3-
COOKING OF CHICKEN -
Oil – 2 Tbsp
Thai Paste – 3 Tbsp
Spring Onion Whites – 2 Tbsp
Soy Sauce (Light) – 1 Tsp
Water – 2-3 Tbsp
Salt TT
Spring Onion Green – 2-3 Tbsp
Cashew (Roasted) – 10-12 no.
Basil Leaves – 12-15 No.
Method-
Heat oil in the pan and add Thai paste. Sauté for a minute then add spring onion white and stir it.
Add marinated chicken and sauté it for 2-3 minutes.
Add soy sauce and water then cover the chicken and cook till its cooked (3-4 Mins.)
Then add spring onion greens, roasted cashew and basil leaves (Tear it and then add)
Give a nice toss, adjust the seasoning and your Thai basil chicken is ready.
