Banana pancakes are my favorite so, of course when one of my loved ones are in need, i cook with i only made a few tweaks that weren' t a huge departure from the original recipe so i' m positive that if you didn' t make the same tweaks, it would still be the bomb. I suffer from inflammation issues so you know i shouldn' t be eating any of this but i did, so i subbed out the sugar for maple syrup. I will say that this recipe is so sweet ( imo) that no additional maple syrup is needed what so ever bc of the ripe bananas and the additional sweetener. Second sub i made was that i had homemade clarified butter and so of course i used it in the base of the recipe. I only had 2 1/2 tbs which was more than enough butter, again, after buttering the pan for each individual pancake no additional fat was needed, this is a ready to go pancake recipe! I ended up adding pecans and chopped bacon to the tops of each pancake and this sent the recipe over the. I did eat a few pancakes sans pecans and bacon and they were fire, so if you can' t do this no worries. Last tweak that i made was to the serving size. It' s recommended to ladle 1/3 cup of batter for each pancake, for me these were too large so i downgraded to a 1/4 cup which to me were regular sized instead of hungry bear sized
