Today, I am going to make Ras Malai, a famous Indian particularly Bengali dessert popular among all Indians. Homemade Ras Malai is usually made from milk, all-purpose flour, Sugar, baking powder and oil, which are kneaded to form a dough, moulded into balls, and dropped into Sweet simmering milk cream.
INGREDIENTS
- 2 Ltr. Milk Full Cream
- 3 Cup Sugar
- 2 lemon,
- 7-8 Chopped Almonds
- Saffron soaked in hot milk.
- 4-5 Cardamom Crushed.
- Pistachios Chopped
- 2 Tbsp Corn Flour.
RECIPE
- Put 1 Ltr. Of Milk in a Pan and Boil. Stir in Between, Otherwise milk may stick to Bottom.
- After Boiling the Milk, Cool it down a little, say by 20 %.
- Squeeze 2 Lemon Juice into a Pot and add an equal amount of water in it.
- Pour Lemon Juice in Milk Little by little. Do not pour it in one go. After Pouring Lemon Juice , Stir well each dropping.
- So that, Milk start Curdling and water and milk separates each other.
- Filter the curdled milk into a Pot through a Cheese Cloth ( Muslin )
- Rinse with Cold water to remove Lemon Flavour.
- Squeeze the water and hang it for 1 Hour to remove its residual water.
Now we proceed to make Rabdi ( Thickened and Sweetened Milk ) .
- Put a Pan on Gas and pour 1 Ltr. Of Milk.
- Boil it, Once it starts Boiling , turn the Flames to Low.
- Keep Stirring Regularly, Put 2 Tbsp of Sugar, Add Saffron, cardamom Powder, Pistachios and Chopped Almonds, Mix well.
- Keep Stirring in Between.
- By Now our Cheese is ready (Chhenna ). Open the Cloth and transfer it to a Plate.
- Mash the Cheese and knead it for 10 Minutes till it turns smooth and without grains of Milk, with your Palm.
- Add 1 tsp of Corn Flour, Mix and Knead again.
- Cheese Dough is Ready.
PREPARATION OF LIGHT SUGAR SYRUP
- Put a Wok on gas and pour 4 Glass of Water, 2 Cups of Sugar. Close the Lid and let it Boil.
- Make small and Flatten Cheese balls , Keep aside in a Plate.
- Like this Prepare all the small and Flattened Cheese balls.
By now, about after 10 Minutes, our light Sugar Syrup is ready.
- Put all the Cheese balls in to the Sugar Syrup one by one. Keep the Flames on High.
- Close the Lid and boil for further 15 Minutes.
- After about 10 mMinutes, Open the Lid and Check, Look they are getting Fluffy.
- Meanwhile, Keep stirring the Milk , It is getting Thickened.
- After 10 Minutes open the lid and Toss and turn the Cheese balls and Close the lid for further 5 Minutes.
- Our Ras malai has expanded and is cooked well.
- Turn off the Flames and let it cool.
By now the Rabdi ( Thickened and Sweetened Milk ) is ready. Transfer it to a Pot and let it cool.
- Cheese balls are also Cooled by now, Squeeze the cheese balls with two spoons.
- Put all the squeezed Cheese balls in Rabdi. One by one.
- Keep aside in Fridge for 4-5 Hours for proper Soaking of Rabdi.
- After 4-5 Hours , Super tasty and Delicious Ras Malai is ready.
- Serve it Cool.
- Garnish with More Rabdi, Chopped Almonds and Pistachios.
