Ingredients:
Chana dal - 2 cups
Sugar - 2 cups
Water - 1/4 cup
Cardamom - 10 pods
Cashew nuts - 15 to 12 nos
Dried grapes (Raisins) - 2 tbsp
Ghee - 1 tbsp
Natural food color (optional)
Oil for frying (can use ghee too)
Method:
▪️Chana dal soaked for 3 hours. Rinsed and strained for 15 to 20 mins on a strainer. Ground coarsely in a blender.
▪️Ground dal is fried in hot oil as pakodas for 2-3 mins on medium heat.
Let it cool completely . Then the fried pakodas are coarsely crushed using a blender.
▪️Cardamom, Cashews and raisins are fried to golden brown in 1 tbsp of ghee. Then the cardamom alone is crushed using mortar and pestle.
▪️In a pan 2 cups sugar and 1/4 cup water is been dissolved by bringing it to boil. Added natural food color and crushed cardamom. Boiled to a consistency where it becomes sticky when you feel it with your fingers. Boiled approximately for 5 mins.
▪️ Add the crushed dal pakoda mix to the sugar syrup along with the nuts and raisins. Cook for 10 mins in low heat. And let it cool for 10 mins.
▪️ Grease your palm with ghee and shape them into small balls.
▪️ Enjoy the yummy and healthy laddus.
