Today, I’m sharing the recipe of Balushahi . Balushahi / badusha is a traditional indian sweet dessert recipe prepared mainly with maida or all purpose flour, deep fried in Clarified Butter ( Desi Ghee ) / oil and soaked in sugar syrup. it has a strong resemblance to glazed Donut but varies with its layered texture and crunchy taste. In North india it is known as balushahi and badusha or badhusha in South Indian cuisine. They are very sweet, but tasty with a slightly flaky texture. INGREDIENTS - 2 Cup All Purpose Flour. - 2 Cup Sugar. - ½ Tbsp baking Powder. - ½ Cup Clarified Butter. - Few Strings of saffron , Dipped in Water. - Refined Oil. RECIPE - Put all purpose flour in a Mixing Pot, add Clarified Butter, Baking Powder and crumble the mixture nicely. - Add water, little a little in phases and start to make dough, Without Kneading, Combine the dough, adjust the water accordingly. - We have to combine to make the soft dough , but do not knead the dough, as the flakiness of balushahi will be lost. - Cover the Dough and set aside for 10 – 15 Minutes. In the meantime , we prepare sugar Syrup. - Put Sugar in a Heated Wok, add 1 Cup of water, Mix till sugar melts fully. - Once sugar starts boiling add Saffron syrup and mix. - Cook on Low flames . Boil for 5 Minutes or till it turns slightly sticky, Need not make 1 string Sugar Syrup. It should not flow freely, when put in a plate. - Pour few drops of Lemon and mix well. - Sugar Syrup is Ready, turn off the gas. - Put refined oil in a Heated Wok. By now the Dough sets well. - Slightly Knead the dough and combine, Spread on a Rolling Board, - Pat and cut the dough into two, Put them Together, Vertically, Spread by Patting and cut again into two. - Repeat the same process 3-4 times. - This process make fine layers inside the dough. - Roll it again on the board, Pinch a small sized dough and make balls. - Make a dent in the centre, with the help of thumb. - Prepare as much Balushahi as you wish. - Transfer the sugar Syrup in to a Pot. - By now the oil gets enough hot, Put all the balushahi , one by one and deep fry them, turn them , once they gets golden brown from one side and gets ballooned. Deep fry only on Low Flames. - Fry the other side also nicely, Once gets crispy and turn golden Brown, Keep them on a Side of a Wok to reduce the Extra oil. It took just 10-15 minutes. - Transfer them to Sugar Syrup, Dip them for 5 Minutes, In between Coat them with sugar Syrup with a Spoon. A very very tasty and mouth watering Balushahi is ready , garnish them with Pistachios or any Dry fruits or Rabri of your Choice. Enjoy the Tasty dish with your nears and dears.
