How to Pickle Beets

We had a great crop of Detroit Red beets ready to pick, so we decided to pickle them! We used a pretty simple pickling recipe, which we will post below. A few things to note - you can use white sugar instead of brown. We like the more malty flavour the brown sugar produces and feel it works well with the earthy flavour of Beetroot. We had roughly a kilogram of fresh Beets and used the following recipe for the pickling solution ✅ 2 cups of Brown Sugar ✅ 2 cups of white Vinegar ✅ 1 Tablespoon of Pickling Spice ✅ 1 Teaspoon of salt ✅ a bay leaf ✅ sprigs of fresh thyme to add to each jar Also be aware that Beetroot will stain quite badly! So be mindful of what it will be coming in contact with during this process.
