Tirmasu cake
It's a classic no bake Italian dessert. Its layered of creamy mascarpone Lady finger soaked in Coffee☕ .
This recipe isn't too sweet and still so yummy.
This recipe makes a rectangle 9x13 inch or a round 9 inch pan.
Ingredients
6 egg yolks
2/3 cup granulated sugar
1 tsp vanilla
1 tsp vinegar
475 g mascarpone cheese
473 ml unsweetened whipping cream
2 cups of coffee + 1/2 tsp vanilla
1 pack of ladyfingers biscuits
Instructions
Whisk egg yolk, granulated sugar, vanilla, and vinegar in a glass or steel bowl. Then place it over a pot of simmering water making sure the water doesn't touch the bowl. Whisk over heat until sugar has devolved and the mixture is light yellow in color and thickened a bit.
Put mascarpone cheese and wisk until combined. You can use an electric hand mixer if you need to. Place in refrigerator until needed.
Whisk the whipping cream until stiffer peaks, but keep an eye on it because it will curdle into butter if overwhipped).
Fold the whipped cream into the mascarpone mixture. You can run a whisk through it at the end to mix any remaining unmixed bits.
Dip the top and bottom of your lady fingers briefly in the coffee mixture. They sop up the liquid quickly so they don't need more than 2 seconds of dipping. Arrange the lady fingers in to the pan as you go. They should be places so there are no gaps.
After the bottom layer of dipped ladyfingers is arranged in the dish add half of the mascarpone mixture on top and smooth out to the edges using an offset or rubber spatula.
Dust with cocoa powder
Dip more ladyfingers, arranging them on top of the filling as you go. Once the dish is fully covered add the remaining mascarpone mixture and smooth out.
Dust top with cocoa powder and chill overnight. You tiramisu needs time to set up
Next day take the tiramisu out if the tray,
and place it onto a serving plate.
dust it with coca powder again if needed
align the lady fingers across
the side of the tiramisu and serve
